Lesson #7 - Simple Buffalo Chicken Dip

GO PATRIOTS!!

Most people think Super Bowl Sunday is all about Football, but we all know it's about the food and drinks.  Our favorite dish is the Buffalo Chicken Dip with Frito Lay Scoops.

Our house hold is definitely a mix bag of teams we root for.  In the 2018 season Alexis was rooting for the Tennessee Titans because of Marcus Mariota, whom previously played for the University of Oregon Ducks. In 2015 at four years old, Breckin was stead fast on following the Seatle Seahawks when they played Mama's beloved Patriots.  He has been an avid fan since.  Sawyer picked up the Denver Broncos this year because of their cute horsey and the color orange.  If you hadn't figured out yet I am a huge Patriots fan due to the fact I am born and raised New England (MA).

Who's your team?

If you notice Sawyer is wearing a Patriots hat, Eagles Jersey and an orange shirt under his jersey!  He felt bad picking a team so he represented both plus his broncos color.

Prep Time: 5 mins

Total Time:  40-50 mins

Servings: 20-30 scoops (depending on who's eating)

Ingredients:

  • 4 boneless chicken breast

  • 8 oz cream cheese softened

  • 8 oz blue cheese dressing

  • 8 oz grated cheddar

  • 8 oz hot sauce

PREHEAT  OVEN TO 350 DEGREES

STEP ONE:

Slowly place the chicken breasts in the boiling water.

Please be sure to keep safety as a priority and judge whether your child is ready to place the chicken in the boiling water.  This is a great teaching lesson about hot water.

Make sure to wash your hands after placing the chicken in the water.

STEP TWO:

Remove the chicken from the boiling water.  (As a parent you may want to check the chicken to ensure it is cooked through). Let the chicken cool on a plate (approximately 10 minutes).

STEP THREE:

Shred the chicken into thin slices of chicken.  The best way to do it is to just pull it apart using your hands.

See picture to the left as an example.

STEP FOUR:

Mix together chicken, cream cheese, blue cheese dressing, grated cheddar and hot sauce.  (I am not a huge blue cheese fan but the flavor is not strong when you use dressing.  If you want a stronger blue cheese flavor use fresh blue cheese.  Another option is to shred the cheddar cheese instead of pre-shredded package cheese.  We use pre-shredded packaged cheese.)

STEP FIVE:

Once all the ingredients are mixed transfer it to a baking bowl.  Choose a bowl that the dip can be served in as well.  Sprinkle a little extra cheddar on top if you want more cheesy flavor.

Bake in the oven for 30 minutes at 350 degrees or until cheese is bubbling.

STEP SIX:

Set out the dip with a bag of Frito Lay's Scoops to be enjoyed by only the fans of your favorite team! Of course we are kidding...serve to all your guests!

The dip can also be served with French bread slices or veggies.  Be creative!
